Year Four, Day 269: Keto Tacos!

 Good Evening Friends:

Today was a very busy day. I am tired. In a very good, I was productive today kind of way!

I am still ketoing. And I made a fantastic discovery! I made some more cheese crisps in my Dash mini grill.  Then I packaged one up for my last meal of the day. I like to get out for a walk every day after babysitting and before teaching piano. A walk is what I need to clear my mind. And get a bit of movement in.

I also enjoy having somewhere to go to sit and read and perhaps have a bite and some tea. The only eating establishment within walking distance that is open for dine is Taco Bell. Not the most keto friendly, or diet friendly place.

But there are some local regulars that sit around and talk and crack jokes. And they have half the tables marked off with x's so it's safe for social distancing and for introverts like me who enjoy sitting and reading in public, while people watching at a distance.

I made a mistake yesterday. I ordered pintos and cheese. My last meal yesterday consisted of trail mix and beans. Not bad, but not especially keto. 


 

I discovered that beans are not particularly low carb and discouraged on the keto eating plan. When I reach my ideal weight, I'm sliding those beans back in. They are chock full of fiber and protein. Plus they have many other health benefits. Take a look:

But for now, I am attempting to stick to keto. Extremely low carb, no sugar, healthy fats, veggies, nuts, dairy. No grains. The goal with this eating regimen is to force the body into ketosis, in which in burns stored fat instead of sugar and carbs. Processed carbs quickly turn to sugar, which the body will burn, leaving your stored fat. Like a camel.

I like camels. I just don't like the hump on my midsection. 

I like a challenge. So today I had an aha moment while I was cooking at home. I made roasted kale, cucumber salad and cheese crisps. I ate them with a leftover stuffed green pepper from yesterday.



I stop eating between 2 and 3 p.m. every day, so I like to have a small meal about 1.  So before I headed out the door with my book bag, I wrapped a cheese crisp in foil. 


At Taco Bell I ordered a crunchy taco supreme, tossed the shell and put the filling on my cheese crisp. And voila! Keto crunchy taco supreme!




Sometimes my brillliance amazes me.


It was seriously delicous!

Highlight of my day. And the rest of the day was prettty nice.

But now my beauty sleep is calling. I have a man flying in Sunday night!

Year Four, Day 328: Success at Last!! This is What I Do

Hello My Long Lost Friends! Or, perhaps it was I who was lost? For instance, when I am not pleased with progress or simply have no words! I was 53 when I first began blogging. I am now 61. I honestly feel better than I did 8 years

Year Four, Day 335: "Crisis Fatigue"

Hello Friends! I have missed you! I have been so utterly exhausted and downright depressed, that I couldn't summon enough energy to even lift my fingers to this computer keyboard to write.  Apparently there is a mental disorder for people going through crises.  Crises such as pandemics, systemic racism, political division, unemployment, police brutality, civil unrest.... It's called "crisis fatigue". When humans are presented with a threat, adrenaline is released to give us quick energy. This is called the "fight or flight syndrome". But when threats are overwhelming, and perceivably continuous, like this year, it overwhelms the system. People can feel numb, depressed, anxious and irritable. Yup. That's me.  I guess I'm quite normal after all! I found an interesting article that describes crisis fatigue, especially in relation to current events.  But it doesn't really address how to take care of ourselves during these unsettling times!

Year Four, Day 247: What Happened in Vegas...

  Expectations can be brutal. Especially when reality dashes them against the rocky shores of our souls. How's that for an opening line? I was so excited about my recent trip to Las Vegas.  I haven't travelled anywhere in so long. I do believe I have been bit by the travel bug.  I want the freedom to go places I have never been, see things I have never seen and experience life as a stellar adventure! My kids are young adults with families of their own.  I have my role as Zma, as Teacher Zita. But I am on a quest to find Zita. She's hidden someone deep inside. Covered in layers. Like an onion. I like the onion analogy. Notice the outermost layer of an onion - dry  and papery. As you peel off layers, the inside is juicy and sweet. I have paid my dues of sacrifice, shame and self deprivation.  What I want now is to embrace the life I have remaining. Have you seen the life pie chart?
