Day 92: The New Plan! :)

I have a week of lunches packed in these tupperware containers! :)

Sorry for the poor photo quality. It's late. I'm exhausted. But feeling so accomplished! I made up a whole week of lunches. Healthy lunches!  I baked some salmon, sauteed some boneless, skinless chicken breasts, hard boiled some eggs, steamed some asparagus and roasted some sweet potatoes and zucchini.  I also chopped up some carrots, celery and radishes.  And then I stuffed the celery with peanut butter. I washed some lovely red grapes and made up little baggies of fresh fruits and veggies. The tupperware has a lunch size portion of either chicken or salmon, plus asparagus, sweet potatoes and zucchini. I also scooped some hummus up into little tiny tupperware containers.

I also made 6 omelette cups in my muffin tin. Eggs, mushrooms, cheese and onion.  Those will be for breakfast. After they puffed up so cute and I put them away, I realized I forgot to put in the spinach!

Maybe I will just eat one on a bed of spinach in the morning. ;)

I'll just grab my lunch in the morning and put it in my lunch bag with an ice pack. Plus a water bottle.

I really am amazed. I can't believe I did this!  And it was fun! I just put on some music and went to work! I keep walking by and opening the fridge and just looking at my creations.  :)

I did spend the day cleaning out the fridge, throwing out old food and scouring the bins and shelves.  It all looks so shiny and fresh. What a wonderful way to start the new week!

This is so contrary to the old, fly by the seat of my pants me.  I hope I can keep this discipline.  This morning, I woke up very groggy and unmotivated.  I didn't do much exercise, besides some yoga and a short walk.  If I can set aside a day a week, preferably Sunday, for food prep, it will keep me on track. 

Moving up to the next level of this health adventure of mine. I really need to nix all the processed food.  I especially want to cut way back on restaurant dining.  But looking at the positive changes over these three months, I am not snacking at night. That is a big deal!  I am getting in exercise everyday.  I have been slowed down by just not feeling so great, which is probably a result of eating too many restaurant meals, the heat and perhaps a bit of stress.  (I worry a lot)

But looking forward, this will be my first week of eating prepared, home cooked meals. I didn't even add salt! I used Mrs. Dash's Lemon Pepper seasoning, pepper and paprika on the salmon and chicken.  And a splash of olive oil.

I'm really excited for this week! Onward!!

Year Four, Day 328: Success at Last!! This is What I Do

Hello My Long Lost Friends! Or, perhaps it was I who was lost? For instance, when I am not pleased with progress or simply have no words! I was 53 when I first began blogging. I am now 61. I honestly feel better than I did 8 years

Year Four, Day 335: "Crisis Fatigue"

Hello Friends! I have missed you! I have been so utterly exhausted and downright depressed, that I couldn't summon enough energy to even lift my fingers to this computer keyboard to write.  Apparently there is a mental disorder for people going through crises.  Crises such as pandemics, systemic racism, political division, unemployment, police brutality, civil unrest.... It's called "crisis fatigue". When humans are presented with a threat, adrenaline is released to give us quick energy. This is called the "fight or flight syndrome". But when threats are overwhelming, and perceivably continuous, like this year, it overwhelms the system. People can feel numb, depressed, anxious and irritable. Yup. That's me.  I guess I'm quite normal after all! I found an interesting article that describes crisis fatigue, especially in relation to current events.  But it doesn't really address how to take care of ourselves during these unsettling times!

Year Four, Day 247: What Happened in Vegas...

  Expectations can be brutal. Especially when reality dashes them against the rocky shores of our souls. How's that for an opening line? I was so excited about my recent trip to Las Vegas.  I haven't travelled anywhere in so long. I do believe I have been bit by the travel bug.  I want the freedom to go places I have never been, see things I have never seen and experience life as a stellar adventure! My kids are young adults with families of their own.  I have my role as Zma, as Teacher Zita. But I am on a quest to find Zita. She's hidden someone deep inside. Covered in layers. Like an onion. I like the onion analogy. Notice the outermost layer of an onion - dry  and papery. As you peel off layers, the inside is juicy and sweet. I have paid my dues of sacrifice, shame and self deprivation.  What I want now is to embrace the life I have remaining. Have you seen the life pie chart?
