Day 105: GF Apple/Walnut/Cranberry Bread Smells Like Heaven to Me!







I am so excited! As I type this, I have my first ever gluten free bread in the oven baking! The house smells divine!  It is apple/walnut/cranberry bread based on a recipe from "Wheat Belly" by Dr. Davis. It uses almond flour, flax meal, applesauce, coconut, coconut milk and coconut oil.

I can't believe I'm really doing this. I was very sceptical of the whole gluten free movement. But I have had such success in just a week, that for now I am sold!

I took my blood pressure again at the "higi" kiosk at Fred Meyer today. It was in the evening, after I taught all day and had rehersal, and several large meals.  So I reserve the right to deduct 5 pounds for food and clothes!  But here are my results:

I am really impressed with my BP and pulse.  No wonder I am feeling so calm. Not anxious or irritated! :)

And like I mentioned in yesterday's blog, I have not been up to par with my exercise regime.  (That will change Monday, by the way!)
These results must have a lot to do with me removing wheat from my diet!
Tomorrow is my little piano concert. I feel ready and excited. I am not expecting much of a crowd. I didn't publicize it much because I simply have not felt good for the last few months. Aching and tired. I mean I have felt pride in sticking to my program. I wish I would have removed wheat at the begin. But there is no looking back.
Like Yoda says: "There is no try. Do or not do!" (Something like that. I hope I didn't misquote the great Yoda!)

OK: Update on my bread. Since I do not eat after 7:00 p.m., I had the manly men of the household sample my bread. My son-in-law, says it is "Tasty. You can really taste the nuts, and dried cranberries. It doesn't taste like bread. It tastes healthy." My son says it is "Delicious! Healthy!" 

I can't wait for breakfast! :)

Hello My Long Lost Friends! Or, perhaps it was I who was lost? For instance, when I am not pleased with progress or simply have no words! I was 53 when I first began blogging. I am now 61. I honestly feel better than I did 8 years

Year Four, Day 335: "Crisis Fatigue"

Hello Friends! I have missed you! I have been so utterly exhausted and downright depressed, that I couldn't summon enough energy to even lift my fingers to this computer keyboard to write.  Apparently there is a mental disorder for people going through crises.  Crises such as pandemics, systemic racism, political division, unemployment, police brutality, civil unrest.... It's called "crisis fatigue". When humans are presented with a threat, adrenaline is released to give us quick energy. This is called the "fight or flight syndrome". But when threats are overwhelming, and perceivably continuous, like this year, it overwhelms the system. People can feel numb, depressed, anxious and irritable. Yup. That's me.  I guess I'm quite normal after all! I found an interesting article that describes crisis fatigue, especially in relation to current events.  But it doesn't really address how to take care of ourselves during these unsettling times!

Year Two, Day 313: Most Excited Am I!

I almost started today's blog with my standard, "Most tired am I" And I am. So tired. And ready for spring.  But tonight when I got home, my wonderful housemate told me that I had a package waiting for me on the counter.  So I ran in and found the book I had been waiting for: Open Mind, Open Heart , by Thomas Keating. Most excited am I! I put a bag of popcorn in the microwave, filled my water and was heading downstairs to open my new book - but I had to detour around the cat who had just killed and attempted to eat a spider. Good kitty! :) I ordered this book the day that I was inspired to turn my introversion into a positive. To use it as a stepping stone to a deeper relationship with God.
